It’s only the first week of May and already I’ve lost count of the number of burgers we’ve grilled. What can I say, when the weather gets warm they become our go-to “it’s 6 pm and we don’t have a plan for dinner” meal. They’re so quick and easy, and of course, juicy and delicious! That said, a steady diet of hamburgers isn’t exactly healthy and I was starting to crave some variety so I went in search of an alternative. I loved the idea of these chicken Parmesan burgers when I saw them – all the flavors of traditional chicken parm but in the fun summer-friendly burger form we crave!
This recipe is super simple, definitely a good weeknight option. I have to confess that I’ve never made burgers with ground chicken before so I stumbled a bit through the cooking process, unsure of exactly how long it would take to cook the burgers through completely. I wound up cutting a burger open to be completely sure I wasn’t serving poor Shane raw chicken. Now that I’ve done it once I’ll be more confident to just trust my instant read thermometer next time. We weren’t having great weather when I made the burgers so I cooked them under the broiler but I think they’d be delicious grilled outside too. We really enjoyed this meal, it’s bound to be a repeat soon.
Chicken Parmesan Burgers
from Elly Says Opa
1 lb. ground chicken
1/4 cup grated Parmesan cheese
1/4 cup plain bread crumbs
2 teaspoons Italian seasoning
1/4 cup chopped flat leaf parsley
1 clove garlic, minced
1 shallot, finely diced
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
pasta sauce
mozzarella or provolone cheese (sliced or shredded)
hamburger rolls
Place the Parmesan cheese, bread crumbs, Italian seasoning, parsley, garlic, shallot, salt and pepper in a medium bowl and stir to combine. Add the ground chicken and gently mix until everything is evenly distributed. Form the mixture into 4 patties and refrigerate for 30-40 minutes to allow the flavors to meld.
Preheat your broiler and set a rack about 6 inches from the heating element. Spray a broiler pan with nonstick cooking spray. Broil the burgers for 5-6 minutes on the first side, then flip and broil for 4-5 minutes on the second side, or until golden and completely cooked through. Remove the pan from the oven and top each burger with tomato sauce and cheese. Return to the oven and broil for about 1 minute, or until the cheese has melted. If you want to toast the rolls, you can pop them under the broiler briefly as well before serving.

Wow, do these look wonderful. I’ve got some ground chicken in the freezer that has just been waiting for some inspiration. I think I found it. 🙂
These were great! I’m all for having them as a regular part of our dinner rotation!
Burgers are always a great idea for dinner, especially if it’s this one.
They look great! So glad you liked them.
I used to have the same insecurity when cooking my first chicken burgers. I like to use dark and white meat for moistness. Breast meat by itself is not very forgiving.
LOVE these kind of recipes, this is perfect for summer grilling…we, too, have lost count of how many times we’ve used the grill already, love spring and summer!
What a perfect burger!
sign me up for one of these, good departure from the normal burger and I bet really tasty.
Gosh I never get tired of burgers! These look sooooooooo good I can’t wait to try them out
Looks yummy!! Will definitely try these next week as I have 1/2 lb of ground ckn in freezer. The only half way decent recipe I’ve found for ground ckn burgers is a Guy Fieri recipe. It just needs a teeny bit of tweekin’.
These sound awesome! I don’t eat meat, but I bet I could do something similar to this with eggplant. Yum!
This one is a keeper! I can’t wait to try it out. Now I need to get some ground chicken.
This sounds AMAZING!
Something i need to try for dinner!
These sound great! I haven’t made chicken burgers before, but I like to make turkey burgers. We haven’t had much grilling weather yet, but hopefully soon!
Those hamburgers do look delicious! What a great dinner idea.
The chickenburger looks so good! And I love chicken parmesian so to have it like a burger would be pretty niffty! However, I’ve never cooked with ground chicken either, so that’ll be an expirience.
That’s such a great idea! I can never convince my husband to try chicken burgers, but he loves parm so this just might work on him. 🙂
Love the fact that it’s chicken burgers. Thanks for sharing! The photos look very cute!
Hmmmm – look so delicious and satisfying Tracey. And like I wouldn’t miss the beef at all.
oooh I absolutely love chicken burgers—I’ve seen a similar burger on annie’s eats that I’ve wanted to make!
Oh, these sound great, Tracey! We eat burgers almost every week once the weather gets warm. I’m not fond of that much red meat, and your burgers sound like a delightful alternative! THANKS!
Oh, I want these for dinner tomorrow… I might have to make a trip to the store! Yum 🙂
I am absolutely drooling… Red Robin used to make a crispy chicken sandwich similar to this one that was to die for. But I think I’ll like this better! It looks delish and you’re totally right. Grilling season is here so I’m super glad you shared this recipe!!!
I’m absolutely drooling over there. I love chicken parm and any variation of chicken parm. But with our grill all fired up at basically all times now, this recipe is perfect!
Two of our favorite things, in one! We’re eating a lot of burgers, too, right now. Our goal is not to repeat a burger for as long as possible 🙂
I love chicken burgers. I make a couple different kinds – this one looks great! Thanks!
Great recipe. I love Parmesan cheese and this is such a clever way to taste all its goodness!
I recently wrote an article on how real Parmesan cheese is made and on its nutritional value. Check it out and let me know your thoughts, I would really appreciated it!
