This week’s Tuesdays with Dorie was chosen by Melissa of Love at First Bite: sweet cream biscuits! The recipe has all of 5 ingredients and can seriously be thrown together in just a few minutes. That might lead you to believe it would be impossible to screw up, but I found a way. Biscuits scare me – I never know how much I should be handling the dough to get the best results. I thought I followed Dorie’s instructions exactly here but clearly something went awry. I did freeze the shaped biscuits overnight before baking, but since Dorie specifically says you can do that, I can’t imagine that was the problem. My little biscuits didn’t rise at all and they definitely weren’t very soft. Still, they were fairly tasty and since I scaled the recipe way back to make just 3 biscuits, I wasn’t too upset.
Since I’m pretty sure these aren’t the biscuits Dorie had in mind when she wrote this recipe, I will have to try them again. I wish I’d had time to research what might have gone and make the biscuits again before today, but I’ve been busy. In lieu of repeating the recipe, I decided to jazz up my little flat biscuits and the first thing that came to mind was strawberry shortcake! Unfortunately, I didn’t have any strawberries so I dug in my freezer and came up with peaches instead. I whipped a little cream and stacked it along with a few defrosted peaches and one of my biscuits. Delicious! Though, in all fairness, anything that includes a mound of whipped cream is awesome in my book.

They look fine to me. You got a nicer shape than I did but mine did taste great and I could have eaten all of them. Good thing, I cut the recipe in half.

Looks like you found a way to make these delicious! Who knows what could have happened – baking is such a mystery sometimes. I froze mine both times I made them and they rose, so that probably wasn’t it. Maybe your baking powder? I wonder if biscuits are pickier about that – if it needs to be really new? I have no idea. If only I had a nickel for every time something went awry in my baking and I had no idea why . . .
Anyway, you made them look beautiful, as always!
So sorry they didn’t work out! Whipping some cream and making a shortcake is a good way to turn them into a yummy dessert. I melted cheddar cheese over some of the leftovers (I made minis) and we had them for dinner.

I made the entire recipe, froze 3/4 of them and they are all gone now. I guess lack of rise didn’t overshadow the taste. Yours look lovely!!

Your shortcake looks fantastic! I definitely have plans for turning some of my biscuits into shortcakes as well… It’s true, there are not too many things that aren’t delicious with a heap of whipped cream!!!

Your shortcake looks great, and I like your plate! Mine didn’t get very tall, but they were nice and tender on the inside.

Peach shortcake? Yum! Mine didn’t come out very nice at all, but at least they tasted good.
The best save of the day! How strange – can’t imagine a freezer would do that to biscuits, but I’m sure they tasted just great with the new “addition”! Sure looks good! – plus, they’re so easy, you can try again in a jiffy! Nice job Tracey!

Haha it’s funny – whipped cream is like bacon! It make everything better! I still haven’t had a chance to make these, but I’m scared of biscuits too! Mine usually come out more like hockey pucks than biscuits! But yours look great!
Yum… these look great to me! Sometimes when you scale a recipe back it can throw off the proportions a bit… so maybe that was the problem? I think they look great, though.
