Sunday night I was happily plugging away on my beloved Macbook when disaster struck. It froze and when I tried to restart it, an ominous gray screen appeared followed by a flashing folder with a question mark. Panic ensued. I tried some of the troubleshooting tips Apple recommends, but nothing worked π The Macbook will be headed for repairs today and I have received hopeful information about a possible fix, so fingers crossed! For now, I’m fortunate we have an old computer so I can still update the blog. Apologies in advance if commenting is a bit spotty this week but hopefully I’ll be up and running again before long!
November is a unique TWD month in that we are free to post the recipes which have been selected in any order we want. This week I decided to make the sugar-topped molasses spice cookies, which were chosen by the fabulous Pamela of Cookies with Boys! Pamela’s blog is great – she makes a ton of delicious recipes from Cooking Light magazines so when I finally get around to flipping through my issues, I already have a sense of which recipes are worth trying.
The molasses spice cookies were a breeze to put together. The dough includes yummy ingredients like brown sugar and molasses and warm fall spices: cinnamon, allspice and ginger. After it is mixed, the dough is refrigerated for a bit. Before refrigerating it, I formed mine into a log so when it came time to bake the cookies, I could just cut slices and stuck them in the oven. The recipe instructed us to shape the dough into balls and roll them in sugar, but I simply took my slices from the log and sprinkled sugar on top. As a result, my cookies weren’t exactly circular (more oval) and definitely weren’t uniform in shape. My friend Kayte said molasses cookies are supposed to look “rustic” so I’m running with that π
What they lacked in looks, these cookies more than made up for in flavor! They’re great – lots of molasses flavor and just a hint of spice. They’re a tad crisp at the outer edges but are otherwise soft and chewy. The cookies are perfect for this time of year so many thanks to Pamela for her selection! Soft and chewy molasses cookies are one of Fall’s little pleasures! Your cookies look amazing. We loved this recipe – my molasses must be darker than yours because my cookies are very deep and dark. I baked mine exactly how you did. 3/4 of my dough is still in the freezer for a future cookie “need”! Good luck with the computer.
Oh these cookies look yummy. I hope your computer is fixed quickly. I don’t know what I would do without my mac. I have the dough for these cookies in the fridge. I’m just going to have to make them because they look so wonderful.

Your cookies look wonderful. These are so wicked…I have to stop making them. Third batch is chilling as Matthew and his friends are begging for more. These are going to the swim meet as well this weekend for the hospitality room b/c if they don’t, I won’t be able to resist. I am happy to hear that you liked them as well since I was trying like crazy to get you to make them with us the other day when you preferred to rake leaves! Very industrious of you, btw. THE SAME EXACT THING HAPPENED TO MY MAC LAST WEEK! Please tell me that you were smarter than I was and you backed up your data on a regular basis… My hard drive is on its way to CA where I will spend an obscene amount of money to get back my photos etc. Seriously, I could buy a new laptop.

Good luck with your computer–I hope it gets fixed quickly. These really are awesome cookies. Like Nancy, I used part dark molasses, so mine are darker than yours. I never seem to do well with slice & bake. I used my cookie scoop to portion my dough.
