This week’s SMS was chosen by Jen of Not Microwave Safe: sticky buns! I love cinnamon rolls and have made them many times, but I don’t think I’ve ever made sticky buns so I was psyched! Also, I was glad this was a treat Shane would gladly eat so I didn’t need to worry about finding someone to share these with π All that said, the last time we made a yeast recipe for SMS (remember the bee stings?), it wasn’t exactly a smashing success for me. I was hopeful the results would be better this time around!

I decided to make a half recipe, confident that between Shane and I we could polish off 6 buns in no time! I used instant yeast instead of active and 1% milk instead of whole but otherwise followed the recipe as written. The dough came together easily, though it was fairly sticky, so I wound up adding all of the additional flour Melissa mentions might be needed. After 10 minutes of kneading with the dough hook in my mixer, I took the dough out and kneaded it by hand for a few minutes to finish it. It was a really nice dough – smooth, elastic and beautifully speckled with the orange zest. The first rise took 2 hours and in the meantime I made the sticky sauce. It smelled amazing – butter, brown sugar, cinnamon and maple syrup are definitely a happy combination! After rolling out the dough, spreading it with the egg wash and cinnamon-sugar and forming the buns, I popped them in the fridge and went to bed.
This morning I pulled the buns from my fridge and found that they’d puffed quite a bit overnight (the picture above is straight out of the fridge). They rose even further in the oven with the steam bath. Finally, they were ready to bake! Mine were done after about 30 minutes. After letting them cool 10 minutes I pulled them out of the pan and dug in. They were quite good and definitely lived up to the expectations that I had for them! If anything, the sticky sauce was perhaps a bit too sweet for me but it didn’t stop me from eating two π I think I still prefer cinnamon rolls but these were a nice alternative. When Shane got home from his 25 mile bike ride this morning he had 3 buns and gave these a huge thumbs-up too!

Thanks for baking this week, Tracey! Your buns look beautiful with all of those cinnamon speckles, and I’m happy you liked the sticky buns version. I think this recipe would also make great cinnamon buns, and that agrees with what I’ve heard from several other people. Wonderful job!
Tracy, your photos of the sticky buns is just perfect and a person could almost reach out and take a bite! You did such a beautiful job and I am glad they worked out and hubby loved them =)
Your sticky buns look so good! I was concerned out making this recipe but was so happy with how they turned out!!
ohhh these look amazing!
Oh, Tracey. Those look incredible. Maybe even better than BBA’s. Now, about that glaze recipe….
These were real tasty, great for replenishing a few calories!
These look perfect! You see my odd shaped ones?? GOOD JOB!
Beautiful sticky buns! I’m glad you liked them, I would have felt a little bad if you hadn’t (after singing the praises of the sauce)! I love that last photo with the pool of sauce on the plate. Yummy…
I feel so guilty now- a 25 mile bike ride?! At least I only ate one!! Your sticky buns look delicious! I left the orange zest out because I was a little wary, but it seems like it got good reviews. Glad your hubby liked them!
Your sticky buns look sooooo tasty! They are one of my favorite fall treats. You can’t beat a fresh sticky bun for breakfast with a cup of coffee!
I think I prefer cinnamon rolls too… but I’ve already had four of these today!!!! π
Your sticky buns look perfect! What a perfect treat to come home to after such a long bike ride.
I had to laugh that you said they were a little too sweet, even though you have a sweet tooth. cute.
Yum! They look perfect.
These look mouth watering! Your photos are great too!
Lovely job on the sticky buns! Your success with the rising has me convinced to use instant, which I noticed is recommended in the BBA book and both breads I’ve tried from there have been great.
Your buns look super sticky and super yummy.
These sound delicious. And your photos are gorgeous. I love that you can put them in the fridge and bake them the next morning.
i wish my sticky buns would have turned out THIS great!! they look amazing! and i’m not just saying that π
i’ll be sure to update if/when i tackle these again!
Your buns look fantastic!
Your sticky bun looks YUM. I loved the scent of the sauce.
Lovely pictures! I meant to make half the recipe, but realized about half-way through that I’d been adding full amounts of all of the ingredients. Oh well! A happy mistake!
Those look wonderful…I would be going straight to hell with these at my house as I probably would have liked to eat all six myself. Wow, you are such a great photographer.
Ugh…those look sinfully good!
Oh wow, these look amazing! Good for Shane taking that 25 mile bike ride so he could enjoy them guilt free. I’m glad these cooperated with you!
Those look perfect! a great post ride treat.
Wow!
Your pictures are amazing! What a wonderful treat!
Oh Tracey! Those buns are just BEAUTIFUL! Your pictures always look so gorgeous… you are such a talented baker AND photographer- I always want to make whatever I see on the screen when I visit your site, even if I’ve just finished baking it! Haha! Definitely give the CI version a try next time you have a craving for sticky doughy goodness π And please let me know what you think!
I hope you’re doing well, and I look forward to hearing from you again soon. Have a great rest of your week, and hopefully we’ll talk after our pumpkin whoopie pie postings…mmm delish, can’t wait!
