These cookies combine most of my favorite cookie ingredients in one – chocolate, peanut butter and oats! They’re really perfect for summer since there’s no baking involved and thus no need to heat up your house with the oven when it’s already 90 degrees out. I needed a dessert at the last minute this past weekend and I just didn’t have time to do anything elaborate so I turned to these cookies. They didn’t disappoint – they’re so simple and delicious! The chocolate and peanut butter lend some serious flavor, the oats contribute texture and the end result is a perfect treat!
One quick note: Rebecca warns that these cookies won’t set if it’s really humid, so keep that in mind. That said, I’ve heard the batter is pretty yummy straight from the bowl if forming cookies isn’t an option due to the weather 🙂
No-Bake Chocolate, Peanut Butter & Oatmeal Cookies
1/2 cup (1 stick) butter
2 cups granulated sugar
1/2 cup milk
4 tablespoons cocoa powder
1/2 cup peanut butter
2 teaspoons vanilla extract
3 cups quick-cooking oats
Add the butter, sugar, milk and cocoa powder to a large saucepan. Bring to a rolling boil and let boil for 1 minute.
Remove the pan from the heat. Stir in the peanut butter and vanilla until smooth, then stir in the oats.
Drop by heaping tablespoons onto wax paper-lined baking sheets. Let cool until set.
Yields 2 to 3 dozen cookies (depending on how large you make them)

I have a friend from grade school, middle school, high school, and college (yes, we spent a lot of years together) that makes these…she started in like the third grade making them and I don’t think she ever learned to cook anything else…she is a lawyer and we kid her all the time about knowing how to make only one thing in the kitchen. Fun to see these.

I grew up on these cookies. So easy to make and very addicting. They even sell them in the school cafeterias around here 🙂

My husband makes a version with marshmallows instead of peanut butter. Also awesome! Whenever he makes them I think, “Gosh, did he have to make those again?” And then I eat them all. Seriously. All of them.
if it’s too humid or the batter is too soft, it’s also super tasty to freeze them. On really hot days that’s my favorite way to eat them!
I make these with a generic Splenda for my fiance’. He was put on insuln earlier this year. He loves these. I can make them fast and leave them for him while I’m at work.
