I’m kind of in denial that not only is it already Friday but it’s almost the end of May. Geez, where in the world has the time gone!? All week I’ve been thinking it’s one day earlier than it is so today feels very much like Thursday to me. I’m not complaining though, bring on Memorial Day weekend! It’s the unofficial start of summer, and that means grilling, swimming and even longer days to enjoy outside on the deck. Yay!
I only wish we had better weather on tap. I can sum up the forecast for today, tomorrow and Sunday with one word: rain. Also, it’s barely supposed to get over 50 degrees tomorrow – that is just not normal for the end of May. Our plans for a big cookout with friends this weekend will definitely have to be put on hold temporarily.
But, I’m crossing my fingers and hoping it’s sunny and warm where you are; perhaps you will be having some friends over for a party this weekend. If so, I thought you might need a super easy, no-bake dessert idea. It’s no secret that I love complicated and time-consuming desserts. My idea of fun is spending my Saturday afternoon in the kitchen putting together a recipe with numerous components. However, I know not everyone has the time or the desire to do the same, especially when summer rolls around.
When I want a low maintenance snack, my thoughts always turn to Rice Krispies treats first. They’re so easy to throw together, and pretty much universally loved. I considered a ton of possible flavor combos, but the 4 jars of Biscoff spread in my pantry pretty much dictated the direction this recipe would take π Not only did I include Biscoff in the treats, but I added some crushed up salty pretzels to help balance all the sweetness. You could totally stop there and have a great dessert, but of course I didn’t. I melted some chocolate chips and more Biscoff to spread over the top. It makes the treats extra decadent but oh so good. The Biscoff flavor really shines through, and that’s always a good thing in my book!
Biscoff-Pretzel Rice Krispie Treats
adapted from Cookies and Cups
{Note: I don’t see any reason why you couldn’t double the recipe and use a 13×9-inch pan instead if you need to serve a crowd.}
2 tablespoons unsalted butter
1/2 of 10.5 oz bag mini marshmallows
1/2 cup Biscoff spread
2 cups Rice Krispies cereal
1 cup crushed pretzels
Topping
1/2 cup Biscoff spread
1 cup semisweet chocolate chips
Spray an 8×8-inch baking pan with nonstick cooking spray and set aside.
Add the butter to a medium saucepan and set over medium-low heat. Melt the butter completely, then add the marshmallows. Cook, stirring occasionally, until the marshmallows are completely melted. Reduce the heat to low and add the Biscoff spread, stirring until it is completely melted and smooth. Remove the pan from the heat, and working quickly, mix in the Rice Krispies cereal and the crushed pretzels until they are evenly coated and distributed.
Transfer the mixture to the prepared pan and press into an even layer. Set aside while you make the topping. Add the Biscoff spread and chocolate chips to a medium saucepan (the one you were just using is fine, I didn’t even wash mine). Set over low heat and stir occasionally until the mixture is melted and completely smooth.
Pour the topping over the treats and tilt/shake the pan to spread into an even layer. Allow the topping to set completely before cutting into squares and serving (I popped my treats in the fridge to speed the process up a bit). Store in an airtight container – I stored mine in the fridge because it was really humid here, and then just took them out a few minutes before serving.

I TOTALLY thought it was Wednesday yesterday. Here in Montreal we have to do move our car every Monday and Wednesday off the street (so annoying) for the street cleaners and I completely forgot!! My son is allergic to peanuts so when I saw Biscoff is nut free I was happy. I learned a new product today and I can’t wait to try this recipe this weekend.

Biscoff Rice Krispies treats sound super yummy, though I also enjoy making complicated desserts. The weather was a little chilly here but super sunny and nice enough for us to go flower shopping. Hope your having a good weekend π

yes. just… yes. OMGYES!!!!! I found some Biscoff spread at a new grocery store (Aldi) that they opened here for $3 a jar!! I did practice some self control (just this once ;P) and only got one jar. however, i’m fairly certain it will end up being made into this. this looks seriously good!!!!!
i don’t know if you respond to comments tucked away in old posts, but i have to ask: how do you get such clean cuts on your bars? the edges of the hardened chocolate topping look perfect!! i’m making these right now for a christmas eve get-together with LOTS of family. hopefully i can make my version look almost as amazing as yours. thanks for the recipe!!
@jamie – Sorry for the delay in getting back to you. My biggest “trick” is to always refrigerate the bars until well chilled before cutting. I try to do that with any type of bar I’m cutting – I think that’s the big key to achieving clean edges. A sharp knife really helps too! Hope they turned out well for you π
