Shortly after Christmas I bought my very first jar of coconut oil. Like so many other trendy things, I feel like I was probably the last person to jump on this bandwagon. To be completely honest, I don’t know if I ever intended to bake with it; I mostly picked it up to try some of the beauty-related uses.
However, as I began to see more and more recipes featuring coconut oil, curiosity got the best of me. I had to bake something, just to see how using coconut oil compared to butter. I knew I wanted to start with cookies, and these mini coconut chocolate chip cookies from Jessica sounded too good to pass up.
The first thing I learned? Measuring coconut oil accurately is kind of impossible. Fortunately, you guys are a lot more knowledgeable than me on the topic and came to my rescue π Once I got past that hurdle, these cookies were a cinch. The dough was a tiny bit crumbly but I’d read that’s normal so I didn’t fret and they baked up perfectly! In addition to the coconut oil, there’s also coconut extract in the cookies, so they’re definitely not short on coconut flavor. And for me, the texture of these cookies couldn’t have been any better. They’re perfectly soft and chewy, they kind of reminded me of Soft-Batch cookies in that regard (and I seriously loved those as a kid!).
Despite the fact that you see me posting tons of sweets here, I really haven’t been eating much of them in the past few months. A bite here or there (for quality control purposes, of course), but then they’re out the door to be shared with friends, family, and coworkers. Not these little guys though – I think I ate 5 of them over the course of a weekend. I kept justifying one after another to myself because, after all, they’re mini! If all cookies made with coconut oil are this good, maybe I should hold off on making another batch for a while…

Mini Coconut Chocolate Chip Cookies
barely adapted from How Sweet It Is
2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup coconut oil, melted and slightly cooled
1 cup light brown sugar (not packed, just fill the measuring cup loosely)
1/3 cup granulated sugar
1 large egg plus 1 large egg yolk, at room temperature
2 teaspoons vanilla extract
1/4 teaspoon coconut extract
2/3 cup mini chocolate chips
Preheat oven to 325 F. Line two baking sheets with parchment paper.
Whisk the flour, baking soda, and salt together in a medium bowl. In the bowl of a stand mixer fitted with the paddle attachment, mix together the melted coconut oil and both sugars on medium-low speed until combined. Let rest for 15 minutes, then add the egg, egg yolk, vanilla extract, and coconut extract, beating until smooth. With the mixer on low, gradually add the dry ingredients, beating just until incorporated (the dough may be crumbly, that’s ok). Mix in the chocolate chips.
Use a small cookie scoop (mine measures about 1 1/2 inches across) to portion the dough on the prepared baking sheets, leaving about 1 1/2 inches between them. Bake for 7-8 minutes, or until the edges of the cookies are set. Transfer baking sheet to a wire rack and let the cookies cool for a few minutes before transferring them to the racks to cool completely.
Store cookies in an airtight container at room temperature.

I have a cookie with coconut oil that I called SOFT BATCH cookies! I made it with molasses, ginger, and it’s one of my fave cookies I ever, ever created. I also have white chocolate and peanut butter versions. I love baking with coconut oil from banana bread to cookies to no-bake goodies…love it. I first used it in 2006 when I was pregnant b/c I read the healthy fats where good, and then gave it up for years…don’t know why, but recently got in the habit again and am hooked. Your cookies look absolutely wonderful!

Coconut oil is one of my favorites! I am currently obsessed with all thing coconut, but that is because I lived without it for 18 years! I am making these cookies first chance I get!
Ooh gorgeous photos as always! Those cookies look completely nom-able. I actually just made another one of Jessica’s recipes that uses coconut oil–her whole wheat chocolate chip mini muffins! They are SO GOOD. Highly recommend. Also, I love making scones or pie dough with coconut oil–it makes a great substitute for butter! I made oatmeal cookie scones with coconut oil and they were great π
I love Jessica’s recipes and these cookies look every bit as delicious. I still love butter but coconut oil is creeping into a lot of my baking at the moment π

So how did you finally measure out the coconut oil? Did you melt it and the measure the liquid part? I probably would not know how to do it and feel so deflated by scraping it all out, haha – they look so fluffy and they sound amazing!!

Do you have Melissa Clark’s “Cook This Now?” It has a great recipe for double coconut granola (oil and chips), that I make all the time. I recommend seeing if your library has the book if you don’t, there are lots of good recipes in it.
I could go for minis, it means I can it more of them, right?

All I had to hear was “Soft Batch”! I am all over these cookies. I bought my first jar of coconut oil last summer, but the only thing I ever did with it was make the coating for my homemade Klondike bars π I’m definitely trying these!
I have been reading lots about benefits of using coconut oil in baking and after this recipe I am ready to take the plunge. What brand did you use and where do you buy it? I know the grocery store has LouAna Coconut oil but I didn’t know if that was what everyone is talking about or if they mean to use organic coconut oil. Thanks,

I still have not hopped onto the coconut oil bandwagon. I keep meaning to try it out, but I have this love/hate relationship with coconut flavor and I’m afraid of things tasting weird :/
Yum! I’ve got a jar of coconut oil, which I used once to make homemade magic shell. I just listened to an America’s Test Kitchen podcast and they said that it’s great for making popcorn, so I’m thinking of trying that. It’s got to be tastier than air-popped.

@Barbara: I bought mine at Trader Joe’s – it’s an organic virgin coconut oil. It’s the only one I’ve ever used so I can’t comment on any other varieties unfortunately.
I have been very curious about coconut oil. I will have to give this a go since it has coconut flavor without the coconut texture that I don’t love. Thanks for sharing!
I made these with my kids today. They are delish! I changed it up a bit though and I didn’t add the coconut extract (didn’t have any) and instead of regular flour, I used the same amount of gluten-free all-purpose baking flour with 1/4 tsp of xanthan gum added because my Mom is gluten free. They came out great!
Haha. That Instagram picture. π I’m with the person who said to just weigh it. Coconut oil is almost the only fat I use and have never bothered measuring it. Too messy! And the cookies look incredible. They’re seriously picture perfect and these pictures + cookies should be in a magazine!

Recently I bought a huge jar of coconut oil because I wanted to switch to a much healthier fat and read that I could use it instead of butter in my cookies and other sweet treats. However, when I used the same amount of coconut oil as butter the muffins came out too oily, so I donβt know if there is a conversion rate to use when someone switches out butter with coconut oil?
Anyway, will definitely try this recipe and hope to see more suggestions for some other yummy coconutty treats! π

FYI, I add two whole eggs, instead of one egg and one egg yolk. The 2nd egg white helped give the cookies some loft and fluffiness which I found really, really delicious. π
