TWD: Chocolate Peanut Butter Brownies

This week’s Tuesdays with Dorie selection marks the very last brownie recipe in the book. Hard to believe we’ve made them all! I’m not really picky when it comes to my brownies – as long as they aren’t super fudgy and have lots of chocolate flavor (without being too bitter), I’m happy. I’ve enjoyed many of the brownie recipe we’ve made with the group, but given that my memory is terrible, I’d be hard pressed to pick a favorite among them. I think it’s safe to say that even the most discerning brownie fan could find at least one recipe that’d make them happy.

I changed up the recipe a bit this week to account for some of the reviews I read from the other bakers. Early reports were that the brownies were thin, and I’m definitely in the “the thicker the better” camp, so in addition to halving the recipe, I used a pan that was probably more appropriate for one third of the recipe than one half. It meant a longer baking time (I think I was close to 40 minutes), but otherwise it worked great. The brownies baked up fudgy with a thin papery crust on top. I found a half empty bag of peanut butter chips in my pantry and threw those in too, because, well, why not. Chocolate plus peanut butter is always a winner.

I think I was a bigger fan of these brownies than Shane, though he didn’t have any specific problem with them. I’d made a big plate of chocolate peanut butter cookies that same day, and I think he just preferred the cookies, which was absolutely fine by me as I was more than willing to keep these for myself. And at the end of a particularly rough day if you were to microwave one of these brownies then top it with a scoop of cookie dough ice cream and a drizzle of chocolate sauce, I wouldn’t blame you :)

Many thanks to Leslie of Lethally Delicious who hosted this week! She shared the recipe for the brownies on her blog, or you can find it on page 90 of Baking: From My Home to Yours. Also, apologies to Jessica of Cookbookhabit who selected the Alsatian Apple tart for our second recipe this week. I didn’t get it to, but you can check out her post for more information!

PS – I’ll be back with a special second post later tonight to celebrate National Bundt Day with Mary of The Food Librarian blog!
