This week’s Tuesdays with Dorie was chosen by Jasmine of Jasmine Cuisine: peanut butter crisscrosses. I baked these late one night over the course of the glorious 3-day holiday weekend. I truly believe all weekends should be 3 days long and they should all involve the kind of amazingly sunny, but not too hot and humid, weather we’ve been experiencing lately. That’s not asking too much is it? 🙂 Fall will be here soon but in the meantime I’m soaking up every last minute of summer!
Anyway, Shane’s parents invited us to lunch at their house over the weekend and I figured these cookies would be the perfect treat to complete the meal. I whipped up half a batch and wound up with somewhere between 25 and 30 cookies. The recipe couldn’t possibly be more quick or easy. The only change I made was to substitute peanut butter chips for the peanuts Dorie called for. I baked my cookies for about 11 minutes a batch, which resulted in a slightly crisp edge and a wonderfully chewy center. The chips added texture and even more peanut butter flavor, not that the cookies were lacking in that area. I was powerless around these cookies so I was really glad I brought most of them to Shane’s parents’ house. Still, I ate more than my fair share, definitely a top Dorie recipe for me and without a doubt one worthy of a repeat.

Your baked goods always look like they were made by angel hands, Tracey, and I’ll bet these tasted just as heavenly! My usual pb cookie recipe has pb chips; so good.
So pretty! I had some issues with my extra peanuts, so I’ll definitely try the PB chips next time!

I did peanut butter chips too. Very yummy! Your cookies look so pretty–my crisscrosses didn’t hold up nearly as well.

I don’t know about three day weekend for stay at home moms, that would mean the kids are only in school 4 days a week! 😉
PB chips–good! I didn’t have any peanuts or chips, so of course, I added chocolate. Your cookies look perfect.
Ya, let me know if you figure out how to get that 3-day weekend thing every week! Your peanut butter cookies look so scrumptious! This is one type of cookie that I’ve never had much luck with. I always manage to always overcook them. Perhaps this will change my luck. I’m bookmarking this one.

These definitely were trouble!! They were so good, and by the looks of yours, there’s no wonder that they were dangerous to be around. Definite repeat over here. And I can’t believe that I didn’t remember to add peanut butter chips! Now I have to make these again. Maybe with marshmallows. Fluffer-nutters anyone?!
I agree, all weekends should be perfectly weathered three day weekends… once I can remember that it’s Tuesday, rather than Monday when I return to work 😉
