This week’s TWD was chosen by Jodie of Beansy Loves Cake: dulce de leche duos! Dulce de leche has seriously been on my list of things to try for ages so I’m grateful that Jodie’s selection forced me to finally check that one off the list this week. Not only have I never made dulce de leche, but I’ve never even tasted it. Dorie’s recipe calls for it in both the cookie dough as well as the filling to these sandwich cookies so the first order of business was making the dulce de leche. I probably could have found it in one of my local grocery stores, but I figured if I didn’t try making it now, it would likely be months (or worse, years!) before I got around to it.
Luckily, this week’s P&Q’s offered a ton of options for making the dulce de leche. I decided to try making it in my crockpot since the method was incredibly low maintenance. You start with a can of sweetened condensed milk. Peel the label from the can and place it in your slow cooker then cover the can completely with water. I filled my slow cooker all the way to the top with water. Place the cover on the slow cooker, set it to low for 8 hours and when you come back, you’ve got dulce de leche! So simple! I started mine before I went to bed on Sunday night and woke up Monday morning to a can of dulce de leche. My dulce de leche wasn’t completely smooth when I opened the can, but I put it in a bowl and whisked it briefly and it was just fine.
This was one heck of a messy recipe! I clearly need more practice when it comes to sandwich cookies because I kept overfilling them so the dulce de leche was leaking out everywhere – the counters, my hands, the plate I stacked the cookies on…. I made half of the recipe and the only change I made was to double the amount of salt based on some of the early reviews on the TWD site. I really liked the cookies themselves. They had the perfect soft and chewy texture and wonderful flavor! When the dulce de leche was sandwiched in between them though, it was too sweet for me. That’s saying a lot because generally the sweeter the better in my book. Since I’ve never had dulce de leche before, I have zero basis for comparison. Maybe my homemade dulce de leche was sweeter than store bought would have been? Who knows 🙂 I’m sending the cookies to work with Shane today so we’ll see what the coworkers think. I know at least one of them has had and loves dulce de leche so I’ll be very interested to hear her review.

Gorgeous photos! I love the ones where the dulce de leche is about to drip out. I ended up making sablees, because my cookies were seriously ugly.
I wimped out and bypassed the can boiling. Yours looks so delicious, mine may not have cooked long enough. And the cookies look amazing! I’m glad you got a chance to try these.

Now THAT is a nice brown caramel color… interesting how different methods produced different colors. Wasn’t that crockpot method the best? How long did you cook yours? I wonder if longer = darker. More experimentation on the way I think! And it was a GOOD messy – well worth the leaky filling!

Have to agree with you on the sweetness issue. I used store-bought–same thing. Yours turned out thinner and I like that better. Not quite worth the calories.

I have yet to do dulce de leche, since there is a lazy way to use slow cooker, I must try this very soon.
I love how your dulce de leche is about to ooze out of the side of your cookie. Obviously I need more cookie taking practice b/c I love your pictures compared to mine. I’m a fan of dulce de leche sandwich but I upped to 1 tsp of salt. Maybe that helped balance out the sweetness?

They look fabulous, Tracey! I wish I made my own dulce de leche, but I had a can I needed to use up. The taste honestly wasn’t my favorite, so I really need to make my own to see if I like it better (I might try the David Lebovitz recipe that has a little salt in it). I bet your cookies are going to be a huge hit at Shane’s work!

Well, you got some great shots before the ddl oozed all over anyway. I preferred these with chocolate. And I feel like something is not quite right with ddl–I think it’s salt. I like salty caramel, I suppose.

Yup, I’m with you…I liked the cookies minus the filling. I used canned dulce de leche, and it was way too sweet for my personal tastes. Your photos are droolworthy – fantastic job!

My first experience with DDL was store-bought, and I didn’t really like it because it was so sweet. Adding salt made a huge difference for me. Your cookies look really delicious!
i’ve never heard of that method before and will have to try it since it is easy and doesn’t require baby sitting! the other recipe i want to try is alton brown’s.

beautiful pictures!! David Lebovitz suggests adding some salt to the condensed milk before cooking it (oven version) maybe that would cut the sweetness for the filling? I love super, super sweet stuff so I could not stop eating these!

The cookies look so yummy, sorry they were a bit sweet for you. I used the David Lebovitz method for DDL since I don’t have a slow cooker. It was a lot lighter, but there was sea salt in it, which cut the sweetness a bit and mine was a bit thicker and spread like frosting.

These were a messy cookie! I bet everyone in the office loved them though. I think I’ve had dulce de leche cheesecake at the Cheesecake Factory, but I’ve never made it or baked with it, so this was a fun recipe.

i think most d-d-l is pretty sweet…maybe that’s why I prefer salted caramel. The cookies look good and I’m sure the coworkers will enjoy them
I love how your dulce de leche is starting to ooze out of the sandwiches! I think ddd is best with a less-sweet cookie, like shortbread. Nice job with your first dulce de leche.
Yours look great! I also added the extra salt and additionally dipped one half in bittersweet chocolate. It helped cut some of the sweetness of the DDL.

I boiled my can of sweetened condensed milk and it turned out a bit custardy, texturewise I mean. Still tasted good 🙂
