This week’s SMS recipe was selected by Cynthia of Bakingtherapist: black bottom brownies! I’d made some black and white cheesecake bars back in November and really enjoyed the chocolate and cheesecake combination then so I was curious to see how these would compare.
This was one week where procrastination seemed to worked in my favor. Many of the early reviews on these brownies were mixed and I was fortunate to receive some tips from Leslie over at Lethally Delicious about how she’d improve the brownies if she were to make them again. When I finally set out to make the recipe this morning, I incorporated Leslie’s suggestions. Specifically, I moved the chocolate chips to the brownie layer instead of scattering them on top of the cheesecake (which had sounded very strange to me the first time I read through this recipe) and I added lemon zest to the cheesecake layer. I didn’t measure how much lemon zest I used but it was probably close to 1 teaspoon – I used my fingers to rub the zest into the sugar to perfume it before proceeding with that part of the recipe. I scaled this recipe back, making just 1/4, and baking it in a loaf pan. The baking time for my scaled down recipe was about 50 minutes.
After letting the brownies cool, I trimmed the edges (which were a bit ragged) and cut them into squares. My 1/4 recipe yielded 8 brownies. I didn’t sample a full brownie but I did eat the edges that I’d cut off and I enjoyed them. I definitely prefer the bars I made in November, but these were tasty too. I liked the chocolate chips in the brownie layer – they added texture and gave the brownies more chocolate flavor. The brownies overwhelmed the flavor of the cheesecake layer in my opinion but I did appreciate the creamy texture the cheesecake added to the mix. Many thanks to Cynthia for hosting this week! The brownie layer DID overwhelm the cheesecake layer and I didn’t even think about it until reading what you said. I love the lemon zest idea and wished I had done that but I did omit the chocolate chips all together. Sorry these were not your favorite BUT your brownies did turn out gorgeous!
We had mixed reviews on these too. We weren’t impressed the first night, but as the week went on, they seemed to get better and better. Yours look great!
These turned out wonderful! I had a small piece and it was pretty good, but the chocolate definitely overpowered the cheesecake. Hopefully my friends will enjoy it.
Oh those look good. I made something similar over the holidays and the top layer didn’t look nearly as creamy and delicious as those.

I read somewhere (can’t remember where) that Nick Malgieri’s Cheesecake Brownies are better. Will have to dig up that recipe. I have a couple of his books so hopefully it’s in there.
Your brownies look fantastic! I always love when waiting till the last minute pays off! I almost sat out this week, but made a tiny batch. We still have a few brownies from SB, luckily Josh is a bottomless pit when it comes to desserts.
I didn’t make these. 🙁 Bad me. I had every intention of making them, and then it was 8 pm Sunday night and game over! I might try to make them for a fast rewind next weekend.

I think layers with brownies are a tricky business. I usually end up wishing I had a great version of one or the other. Yours look like they were worth the gamble, though!

They look fantastic; great job! I thought the chocolate chips on top would be strange, but over half of them sunk down to make a nice extra fudgy brownie layer right under the cheescake.

Well they sure do look wonderful! I just can’t stand being disappointed by chocolate, but I love cheesecake and brownies so I do want to find a great recipe for black-bottom brownies.

I’m glad you were able to tweak these and get a little more flavor! I wished these turned out better for me, so I’m happy someone could benefit from my disappointing results!
