This week’s SMS was chosen by Lauren of Fried Pickles & Ice Cream: raised waffles with warm brown sugar bananas. These yeasted waffles take a bit of planning as the batter must be made and left to sit overnight before they can be cooked. I’m actually a big fan of waffles but I rarely have the motivation to make them normally. I might make an exception for these waffles though. I thought they were really good – crisp on the outside and tender inside!
I didn’t have bananas on hand for the warm brown sugar topping so I substituted apples. I also left out the rum the recipe called for. I found that I actually preferred the waffles without this topping. I have a major sweet tooth but the topping was just too sweet and sugary for me. I froze most of my extra waffles and found they were perfect when I toasted them and topped them with just maple syrup.

Yum. I like the apple idea. Yeasted waffles are my absolute favorite, the only kind I ever make anymore. The girls love them too. I just need to remember to make the batter the night before. =)

Those look great – I think once you try raised waffles, you can never go back to the “regular” kind, even if more planning is involved. I want to try the SMS recipe!

HMM apples did sound like a good alternative, but perhaps the bananas were better? Who knows!

Mm APPLES – good idea! I thought these were perfectly crispy on the outside and soft on the inside too. I’m usually too lazy to do waffles, too – but these are great since you can do most of the work the night before!
This is a completely new recipe to me and I hope to try it over the holidays.
About the chestnut cake -it’s really alot of work. The cake with its separated egg whites would be fine on its own. I think a few people have pointed out that the milk chocolate caramel icing (and the brandy syrup) would be lovely on any white cake. Also, if you do the whole thing, you need people who will eat a very rich cake.

This makes me want a better waffle maker – I have some $7 one I bought a while back, and it never gets hot enough to make crisp waffles. These look delicious!

I love waffles. Growing up I always requested them for my birthday breakfast. I don’t make them very often though. These ones look great. The apple topping looks delicious, too bad it was overly sweet!

Your waffles look great. I was thinking of making the topping with apples too, which is why I added cinnamon to the batter, but then I decided not to make any topping after all my mishaps.

These look awesome Tracey. I too prefer my waffles “untopped”. Waffles are a favorite at my house so I will have to try these soon.
They look so light and crispy (I’m guessing the yeast helps with that). Yum!
