Though we usually only post one cupcake recipe a month for the Martha Stewart Cupcake Club, we had an optional bonus round for September! The cupcake selection was banana-pecan cupcakes and since I had all of the ingredients on hand, I decided to jump in on the fun!
The full recipe makes 28 cupcakes but I decided to make 1/3 (mainly because the eggs divided by 3 nicely) and got 11 cupcakes. I used my hand mixer and the recipe came together quickly. I did burn the pecans the first time I toasted them but that’s what I get for not setting my oven timer! The recommended frosting is a caramel buttercream, which sounded amazing (and I do hope to try it soon), but I went with the cream cheese frosting we made earlier this month because it was a bit less complicated to throw together and I already knew it was delicious! I also used my Halloween cupcake liners – it’s almost October and I decided that made it ok 🙂
I am not a big pecan fan, but I did try one of the cupcakes and thought it was delicious! Lots of banana flavor, great texture and quite moist. I gave the rest of the cupcakes away this morning so I’ll have to report back when I hear what the recipients thought. This is a terrific book so I definitely recommend picking it up! Oh, these look so great. I love the wrappers…maybe I should go up and start getting out Halloween decor (it is October tomorrow after all) and put those around instead of reading…maybe. I love the swirly frosting and I am sure the cream cheese was a great choice with these. I am also thrilled to have something else to do with overripe bananas as all I ever do is make banana bread. Boring. Your cupcakes look great! Always fun baking with you around.
Tracey! I thought the cupcakes were great as well! Super moist and flavorful! I did increase the brown sugar and cinnamon and I think that made a tad difference! 😉 And yeah, I skipped the caramel buttercream frosting.

I think I actually like the sound of the cream cheese frosting better! And I love the cupcake liners- so cute. Definitely not too early for Halloween!

They look really good. Cream cheese frosting is my favorite followed by chocolate cream cheese as a close second, lol!

Oooh, now I wish I’d saved some ripe bananas to make those in time for the challenge. You can never go wrong with the MS cream cheese frosting, but I’d love to try the caramel frosting. Beautiful cupcakes!

Should have totally went the caramel buttercream. So yummy. I wanted more of it, but I knew for me and the [non]exercise getting done that I needed to to eat just one. haha.
Those look fantastic, Tracey. I love the fact we no longer HAVE to cover the whole top with frosting. Sooo much easier.

Beautiful… Those cupcakes look amazing! I could use a few of those today.
Thought I’d finally weigh in! These were a hit! First took a couple to my sister’s to rave reviews, then (after putting one aside for Becky) the rest disappeared from my office almost as soon as I set them out. Becky gave a big thumbs up as well. I think a big part of the reason these were so popular was the pairing with the cream cheese frosting.The flavor was great in the cupcake too, but not overpowering. They did look great as well, but I don’t know how much I (or anbody in our office) really cares about that lol. Thanks again!

That cream cheese frosting looks so incredible. I really need to get the MSC book. These look like they would be a big hit in my house, and really easy to convert to an alternative sweetener. Beautiful!
