This week’s SMS was chosen by Stephanie of Ice Cream Before Dinner: chewy peanut butter cookies! I don’t make peanut butter cookies all that often, but I really enjoy them. I’d actually tried this recipe back in March when I made these cookies to bring to one of Shane’s races. They were a big hit then so I figured I’d make them again this weekend.
There were two things that stuck out in my mind from my experience making them in March. First, the dough was pretty sticky so I had trouble flattening it and using the fork to make the trademark peanut butter cookie crosshatch. This time, I had the most success by dusting the top of each cookie with a little flour before flattening and making the crosshatch. Melissa suggests dipping the fork in flour but that didn’t work for me.
Second, the recipe calls for baking the cookies 10 minutes. I found that was nowhere near enough time – at 10 minutes, the cookies were bordering on raw in the middle. Having learned my lesson last time, I baked the cookies for 14-15 minutes this time and they were perfect! They were still very chewy and soft with just the right amount of peanut butter flavor.

Yum these look so good! I fell in love with this recipe and I have to get them out of the house now! Just knowing they are sitting up there in the kitchen in that cookie jar is driving me nuts!! Smart girl sending them off ot work with the hubby, I do the same thing!

Great job on the cookies!!! I LOVED them!!!!!! Im about to make another batch! I find that greasing my hands and rolling the dough in a ball in them works wonders since the dough is sticky.
Great pics and they look so perfect! Mine were flat and way too soft, reverted to my old recipe.
Dipping the fork in flour didnt work for me either. Next time, i’ll dust the cookies with flour. Your photos are gorgeous!!
I had the sticky dough problem, too, and the floured fork didn’t work for me either… Yummy cookies, though! Yours look great! So symmetrical, I’m very impressed.

they look great. I had trouble w/the fork too but after the first one, the flour adhered to the fork well and I didn’t have any issues making the criss cross pattern
Great photos, per usual! These would definitely be a big hit after a race or anytime, really. It’s funny, my dough was kind of crumbly, not sticky.

As soon as I saw your cookies, I was instantly reminded of PB cookies that my great grandmother used to make. These look so delicious! I will give this recipe a try!

The dough was a lot stickier than what I am used to for a peanut butter cookie but I loved the flavor! You could try rolling in sugar as well.

Mmmmm…. your cookies came out fabulous, Tracey! Fantastic Job 🙂 We were thinking on the same page with photographing stacks of PB cookies. Great tip about dusting the top with flour to make the cross hatch. I always dip my fork in a little water and then into some sugar (because, really could a little extra on top ever really hurt? not so much!)
