This has been a popular chicken recipe at our house for at least a few months now. I finally took some pictures this time we made it so I could get it up here on the blog. It’s a really quick and easy way to get dinner on the table and the chicken never dries out, which is always a bonus!
Garlic Cheddar Chicken
2 tbsp butter
1 clove garlic, minced
3 tbsp dry bread crumbs (I use Italian Seasoned Bread Crumbs and omit the seasonings below)
1/8 tsp dried parsley
1/8 tsp dried oregano
1/8 tsp ground black pepper
1/8 tsp salt
2 tbsp freshly grated Parmesan cheese
6 tbsp shredded Cheddar cheese
2 boneless skinless chicken breasts, pounded thin
Preheat oven to 350 F.
Melt the butter in a saucepan over low heat, and cook the garlic until tender, about 5 minutes.
In a shallow bowl, mix the bread crumbs, Parmesan cheese, Cheddar cheese, parsley, oregano, pepper, and salt.
Dip each chicken breast in the garlic butter to coat, then press into the bread crumb mixture. Arrange the coated chicken breasts in a 9×13 inch baking dish. Drizzle with any remaining butter and top with any remaining bread crumb mixture.
Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.
